Every now and then I like to switch up my recipes. Since my bf is diabetic I tend to explore meals that he can enjoy too.
So on Monday I decided to try out this new recipe for Bacon Meatloaf.
Here is how it turned out for me.
So I got all the ingredients that it asked for and prepped everything.

I combined all the ingredients and put it into a 12″ glass pan. After that I applied bacon on top to cover the whole thing. What the person never mentioned is the fact that it will be so fatty that the juices will make it hard to crisp the bacon.
So as I pulled it out of the oven I poured out all the juices and put it back in the oven for another 20 minutes. I wanted to make a side dish so I made Cauliflower mash potatoes (without the potato). By the time both were done we were already hungry so I apology for the cut meatloaf.
When I had my first bite it was disappointing. Since the ingredients weren’t measured to be balance correctly I had some bites that tasted good and other that tasted bland. My bf tried to be nice and say that it was okay. But I didn’t bite my tongue when I said I hated it. After that one piece I did not go back for left overs if anything I told my bf to throw the rest away. Made me sad that I wasted all this meat and food on a dish that was such a pain to eat.
As I served myself more mash cauliflower my bf said that I should probably stick to my original recipe and I couldn’t agree more. But the Cauliflower was beyond delicious. All you do is boil it until it is tender then throw it into the food processor with olive oil, butter, salt and pepper.
Oliver oil (1 tbs)
Butter (1 tbs)
salt and pepper (to your taste).
Hopefully the next recipe I make will be a success.
